Spinach and Bean Salad
This salad recipe is very healthy, easy to make, inexpensive, and has a strong delicious flavor. It serves 2.
Ingredients:
2 cups Spinach
2 Garlic cloves
2 TBSP Balsamic vinegar
3 TBSP Olive oil
1/2 cup beans (garbanzo, pinto, or black)
1/2 small yellow onion
The first step is to make the vinaigrette that requires a blender. Place the garlic cloves, balsamic vinegar, and olive oil in the blender for 20 seconds until it is well mixed.
Chop the onions and add them to the spinach and beans, then add the vinaigrette. The dressing goes well with any other vegetables so add as many as you like.
Substitutes for even greater savings:
- Spinach can be substituted with lettuce.
- Olive oil can be substituted with vegetable oil.
