Sausage And Peppers For Pasta

by Scott
(Dallas,TX)

Simple and Delicious

Simple and Delicious

Ingredients:

1 pound Eckridge Sausage (or similar)

1 cup chopped onion.

1 cup chopped bell pepper.

1 garlic clove (peeled, chopped)

1 8oz can of tomato sauce.

You start by slicing the sausages into pieces. Cook them in a pan by themselves until lightly browned. Remove from the pan and place on a paper towel to get rid of some grease.

Put the onion, bell pepper and garlic in the pan and let it cook until tender. Then, place the sausage back in the pan, and add the tomato sauce. Let simmer for about 10 minutes.

This can go on pretty much any kind of pasta, but is especially good on tortellini or rigatoni.
