Easy Whole Meal Meatloaf

Pre-heat 350
1 Lb Ground beef
1 egg
1/2 cup seasoned bread crumbs
1 Tsp salt
1 tsp pepper
1 Cup 2% milk
1 tablespoon Worcestershire sauce
1/4 teaspoon fresh ground pepper
2 cloves garlic, minced
1 small onion, finely chopped
1 cup finely chopped kale
1 baked potato, skinned, and cubed
1/2 cup cheese
1/2 ketchup/BBQ sauce of choice (optional)
Mix everything but the potato, cheese and ketchup thoroughly. Fold in the potato cubes and cheese. Put in a loaf pan and top if you want with the ketchup or BBQ sauce. Cook for 1 hr- 1 hr 15 minutes, until meat is not pink any more.
This is an amazing recipe for those trying to save money, but not compromising nutrition. I can not for the life of me get my kids to eat their veggies, so instead of wasting money on trying to get them to like the taste, i made their favorite meat loaf and added the super nutritious veggie Kale, which takes on the taste of the meat.
