Easy Broccoli-Cheddar Quiche

1 1/2 cups milk
3 eggs
3/4 cups all-purpose flour
3/4 teaspoons baking powder
2 Tablespoons melted butter
1/4 teaspoons salt
1 cup frozen chopped broccoli
3/4 cup shredded cheddar cheese

Preheat oven to 400°. Spray a 9-inch pie pan with nonstick spray. Mix first six ingredients in a medium-sized bowl. Set aside. Spread broccoli evenly in pie pan and top with cheddar cheese. Pour over cheese and broccoli. Bake for approx. 30 minutes, until brown all over. Let set for 5-10 minutes before cutting and serving.

This is a great way to use up leftover vegetables. You can substitute corn, cauliflower, peas, asparagus, or carrots for the chopped broccoli. Just remember to cut into small pieces before you use them for this recipe.
